Ingredients List
1/4 cup candied pecans or sea salt roasted pecans
1/4 cup pumpkin seeds
1/4 cup dried cranberries
1 sweet potato, cubed
2 cups arugula or shredded kale or shredded romaine lettuce
1/2 honeycrisp apple, thinly sliced
1/8 cup crumbled feta cheese
1 jar Forklore Foods creamy spinach basil pasta sauce
Recipe Instructions
Cube and peel sweet potato. Toss with 1 tablespoon olive oil and bake at 400 degrees for 20 minutes. If pecans are untoasted, bake with sweet potato for 8 minutes.
In a large bowl, add veggies (arugula or shredded kale or shredded romaine lettuce), apples, cranberries, pumpkin seeds, pecans, sweet potato, and feta cheese.
Divide salad into individual bowls. Top with sauce as dressing. Serve and enjoy!
